Beef burger with figs, stracciatella cheese, and caramelized onions

Who can resist this beef burger with figs, stracciatella cheese, and caramelized onions? With this dish, we explored the versatility of figs in savory dishes: the sweet-savory contrast is a delight with every bite!

Ingredients · Servings 4 people
  • 600 g minced beef pulp
  • 120 g minced pork pulp
  • 120 g stracciatella (or robiola)
  • 4 round buns
  • 4 figs
  • 2 medium red onions
  • Timo
  • rice vinegar
  • rosemary
  • sugar
  • extra virgin olive oil

Method · 1 ora
  1. Combine the meats in a bowl with finely chopped rosemary, a pinch of salt and pepper, and 1 tablespoon of oil, and mix well. Cover with plastic wrap and refrigerate.
  2. Peel the onions and slice them into 5 mm thick rounds. Heat 1 tablespoon of oil in a nonstick pan, add the onions and ½ cup of water, and bring to a boil. Add 1 tablespoon of sugar, 2 tablespoons of rice vinegar, 2 sprigs of thyme, salt, and pepper. Reduce the heat and continue cooking, covered, for 5-6 minutes, until the onions are caramelized. Discard the thyme and let cool.
  3. Peel the figs, cut them into slices and set them aside.
  4. Form 4 burgers with the meat mix so that they are slightly larger than the diameter of the round buns.
  5. Heat a griddle or pan and grease the bottom with a little oil.
  6. Cook the burgers over high heat for 3 minutes per side. Remove from the heat and let them rest on paper towels while you cut the buns.
  7. Layer them with the burgers, stracciatella, figs, and caramelized onions.
