Mixed fried shrimp and squid with roasted garlic mayonnaise

Fried shrimp and calamari is a summer classic: crispy on the outside and soft on the inside, we offer it accompanied by a special sauce.

Ingredients · Servings 4 people
  • 1 kg cleaned squid
  • 18 cleaned prawn tails, with the shell
  • 200 g durum wheat semolina
  • 2 egg yolks
  • 2 cloves of garlic
  • lemon
  • peanut oil

Method · 50 minuti
  1. Roast the unpeeled garlic in the oven at 180°C for 25-30 minutes (if possible, add it when you're planning other cooking options, or use an air fryer). Alternatively, you can use black garlic.
  2. Remove the garlic pulp and combine it with the egg yolks in the bowl of an immersion blender. Add 150g of peanut oil, the juice of half a lemon, and a pinch of salt, then blend everything together until you obtain a mayonnaise.
  3. Flavour the semolina with the grated zest of 1 lemon and pass the calamari cut into rings and the whole prawns through it.
  4. Fry them a few at a time in oil at 180°C for 1-2 minutes and drain them on kitchen paper.
  5. Salt them and serve them with mayonnaise and lemon wedges.

We perfected the recipe with advice from Paolo Casagrande, chef at Lasarte, which earned its third Michelin star in 2016, and our mentor for the magazine's recipe book of the month.

Here are his suggestions regarding our chefs' initial idea: "I would replace the strawberry mayonnaise with a garlic mayonnaise, cooked first in the oven and then added while the mayonnaise is emulsifying."
