Elderberry, apple, and sorrel: a non-alcoholic cocktail
Elderberry, apple, and sorrel is the recipe for a refreshing, aromatic, and well-balanced non-alcoholic cocktail. The delicate scent of elderberry blends with the fresh, fruity sweetness of apple. The sorrel adds character to the drink, with its pleasant, tart, and slightly citrusy note.

- 200 g dried elderberries (or fresh in season)
- elderflowers
- 100 g sorrel leaves
- 20 ml apple juice
- ice

- Boil the berries in 500 g of water for 5 minutes, strain the liquid through a fine sieve, pressing on the berries. Let it cool, add the elderflowers and let it steep until cool, then strain through a fine sieve lined with cheesecloth.
- Extract the sorrel juice from the leaves. Pour the apple juice, 70 ml of strained elderberry juice, 20 ml of sorrel extract, and a few ice cubes into a mixing glass.
- Stir to cool, then serve in a glass with new ice and garnish as desired.
