Mocktail: Stormy Miso

Non-alcoholic cocktails by Oliver Schwarzwald

Ingredients
  • 25 g white Misopaste
  • 500 ml water
  • 2 cl Yuzusirup
  • 1 cl Verjus
  • Ginger Beer
  • ice cubes
  • blossom
  • Mandarins
Method
  1. Heat the water and dissolve the miso paste in it. Set aside until the miso has settled. Then carefully strain through a coffee filter.
  2. Pour 3 cl of miso water into a glass with the remaining ingredients, fill with ice, and top with ginger beer. Stir gently. Tip: If you don't use up the light miso right away, don't worry – it keeps for a long time in the refrigerator.

The recipes come from the book "High Level Zero" by Oliver Schwarzwald. The food photographer and amateur chef began to rethink his approach in his mid-40s: alcohol had "infiltrated" his cooking and other areas of his life. The new alcohol-free alternatives to wine and spirits thrilled him and opened up a "completely new perspective" on his hobby. On his blog, he presents menu accompaniments, aperitifs, and food pairings entirely without alcohol.
