The delicious chicken scarpariello recipe was provided by Chef Jaime Chabla, the Executive Chef at Il Monello, a classic Italian restaurant in Manhattan, located just a few blocks away from the UN Headquarters.

Instructions

Cut your pieces of chicken into bite-size pieces, making sure they are the same size to avoid undercooked/overcooked pieces.

Heat the pan with 4oz (115 ml) of oil.

Lightly toss to coat the chicken with the flour and place them on the heated pan making sure each side of the chicken is golden brown and crispy.

Once they are golden brown, drain the leftover oil from the pan and keep the chicken in the pan.

Next add the chopped cloves of garlic, and rosemary, as well as a pinch of salt & pepper. Sautée in the pan for an additional 2 minutes.

Next add the white wine, lemon juice, butter, and chicken stock to the pan.

Once the butter is melted place pan into the preheated oven at 350° degrees Fahrenheit (180° Celsius) for 4 minutes.

After the oven, place the pan back.
