Mushroom ragout with sausages

You don't have to just grill fresh sausage, you can also make this delicious quick ragout. It's sure to come in handy as a family dinner or as a party dish for a get-together with a bunch of friends.

Ingredients · Servings 4
  • 2 tbsp olive oil
  • 1 piece carrot
  • 3 pcs spring onions
  • 2 cloves garlic
  • 1 handful of mushrooms
  • 1 tsp oregano
  • 1 tsp fennel seeds
  • 6 pcs fresh sausage
  • 400 g canned tomatoes, chopped
  • 1 tbsp ketchup
  • 100ml water
Method · 35 min
  1. Heat the oil in a large saucepan over medium heat. Add the grated carrots, finely chopped spring onions, garlic, finely chopped mushrooms, dried oregano, fennel seeds and a pinch of salt. Sauté together for about 5 minutes, stirring occasionally.
  2. Add the sausages squeezed from the casings to the spiced mushroom mixture and fry until golden brown.
  3. Then add the chopped tomatoes and ketchup, season with salt and pour in about 100 ml of water.
  4. Reduce heat to low, cover and let reduce and thicken, stirring occasionally. This will take about 20 minutes.
  5. Season with salt and pepper to taste. Serve with mashed potatoes, pasta or couscous. Source: BBC Good Food
