Vegetarian lentil ragout

Vegetarian lentil ragout is the perfect dish to warm your body and soul in cold weather! It's incredibly tasty and healthy at the same time.

Ingredients · Servings For 4 people
  • 250 g lentils
  • 450 g potatoes
  • 3 pcs carrots
  • 1 leek
  • 150 g celery
  • 1 clove garlic
  • 2 pcs onion
  • 2 tbsp vegetable oil
  • 1 l vegetable broth
  • 1 pinch of curry powder
  • 1 tsp vinegar
  • 1 pinch of granulated sugar
  • 1 tbsp parsley
Method · 50 min
  1. Pour the lentils into a sieve, rinse with cold water and let drain. Then peel the potatoes and carrots and cut them into cubes.
  2. Wash, clean and cut the leek into small pieces. Peel the celery and cut it into cubes. Finally, peel the garlic and onion and chop them finely.
  3. Heat the oil in a pot. Add the diced potatoes, vegetable pieces, garlic and onion. Fry everything, stirring occasionally.
  4. Pour the vegetable stock over the ingredients in the pot. Add the lentils, season with curry powder and bring all ingredients to a boil. Let everything simmer for about 30 minutes over low heat.
  5. Season the stewed lentils with vinegar, salt, pepper and sugar and serve sprinkled with parsley to taste. Source: Das Kochrezept
