Muslo de pavo desmenuzado con repollo y panqueques de papa

- 700 g sauerkraut
- 1 bay leaf
- 1 apple
- 2 pcs onion
- 2 cloves garlic
- 1 piece of turkey leg
- 2 tsp cumin
- 2 tbsp lard
- 1 kg potatoes
- 1 tsp salt
- 180 g semi-coarse wheat flour
- 1 egg yolk

- Place cabbage, bay leaf, apple, chopped onion, garlic slices in a slow cooker and stir. Season turkey leg thoroughly with salt and pepper on all sides and place on top of cabbage. Add 2 teaspoons lard.
- Turn on the device, close the lid and set it to low temperature for 8 hours.
- Once the meat is almost done, start preparing the lox. Boil the whole potatoes in their skins. Peel them while hot, mash them, add salt and flour. Work quickly, the dough tends to thin out, you may need to add a little flour - but be careful with the amount so that the pancakes are not too stiff. If necessary, you can also incorporate egg yolk or beaten egg into the dough.
- Separate a piece of dough the size of a golf ball and roll it out on a floured surface into a thinner pancake. Heat a heavy-bottomed frying pan and dry-fry the pancake on both sides until blisters appear. After baking, immediately brush the hot pancake with lard. Stack the finished and greased pancakes on top of each other on a plate. Continue in this way until the dough is used up. Keep the pancakes warm.
- Take out the finished meat, it should fall off the bones. Remove the skin and bones and shred the meat with a fork. Taste the cabbage and add a little sugar or salt if necessary, or slightly acidify. Wrap the shredded meat and cabbage in lokši as a wrap and garnish with parsley leaves. SOMETHING EXTRA Egg yolks and eggs are usually not added to the lokši dough, but you can use them as a binder if the dough doesn't hold together.
