Kanelbullar by Markéta Pavlej as a Christmas tree

Get inspired by the recipe prepared by food blogger Markéta Pavleje using the Kenwood Titanium Chef Baker food processor.

Ingredients
  • 240ml milk
  • 2 tsp yeast
  • 2 tbsp cane sugar
  • 80g butter
  • 3 eggs
  • 500 g plain wheat flour
  • salt
  • 130 g cane sugar
  • 110g butter
  • 1 tbsp cinnamon
  • 1 handful of raisins
  • 100 g nuts
Method · 2 h 20 min
  1. Put the milk, sugar and yeast into the bowl of the food processor, mix well and let stand for 10 minutes. The mixture should start to bubble. Add the butter, eggs, flour, salt and lemon zest and use the kneading attachment to knead the dough until smooth (about 10 minutes).
  2. Cover the bowl with the dough with a towel or foil and let it rise in a warm place for about 40 minutes until it doubles in volume. In the meantime, prepare the filling by beating the butter, sugar and cinnamon. Markéta's tip: The Titanium Chef Baker robot has two bowls. You let the dough rise in the first one and continue working in the second one. This way you don't have to wash or transfer it.
  3. Transfer the risen dough to a floured rolling pin and roll it out into a large rectangle, which you spread with the prepared cinnamon filling all over. Fold the dough into thirds along the longer side towards the center. This will create a long strip.
  4. Cut it into 12 equal strips with a knife. First cut in half, then into quarters, and each quarter into 3 equal strips. Grease a muffin tin and start braiding. Cut the strip into three equal-length strings, but leave the top edge uncut. Braid the three strings into a loose braid. If you like raisins, place them on the bottom of the braid and then roll the whole thing into a ball. Place this loaf in the muffin tin and braid and roll the remaining dough in the same way.
  5. Brush the braided loaves with beaten egg, sprinkle with chopped pecans and let rise. This will take approximately 20 minutes.
  6. Preheat the oven to 180°C using the top and bottom heat function and bake the risen loaves for 30 minutes until golden brown.
