Merluza al horno con puré de calabaza, zanahoria y almendras, y rábanos encurtidos

Inspirados en la cocina georgiana, que adora las pastas caseras de avellana o nuez, que dan un toque especial a platos de carne o verduras, elegimos almendras, que combinan a la perfección con calabaza, zanahorias y pescado.

  • 2 pcs carrots
  • 5 cloves garlic
  • 400 g pumpkin
  • 100 g peeled almonds
  • 4 fillets of white fish
  • 1 handful of sliced ​​almonds
  • 1 tsp honey
  • 1 pinch salt
  • 75 g radish

  1. Preheat the oven to 180°C (fan 160°C). Line a baking tray with foil and brush with oil. Spread the carrots in a single layer on the baking tray, season with salt and pepper. Crush the peeled garlic with the flat side of a knife and add to the carrots. Place the pumpkin on top of the carrots and garlic, drizzle with oil, season with salt and pepper. Place in the oven and bake for 30–40 minutes until the vegetables are soft and starting to brown around the edges. Remove the tray and let the mixture cool, do not turn off the oven.
  2. Grind the almonds finely (e.g. in a spice grinder). Squeeze the roasted garlic from the skin and place it in a food processor along with the ground almonds, carrots and pumpkin. Blend until smooth, if too thick, thin with a little water.
  3. For the radishes, dissolve the honey and salt in the lemon juice and taste the mixture: it should be just the right amount of sweet, sour and salty. Adjust to taste, stir in the radishes and coat them in the mixture.
  4. Heat 2 tablespoons of oil in a non-stick, heatproof pan. Salt the skin of the fish and place the fillet, skin side down, in the hot oil. After five seconds, shake the pan to prevent the fish from sticking. Fry for 5 minutes, then place in the oven for 5 minutes to finish cooking the fillets.
  5. Divide the puree among plates and place the fish on top, skin side up. Add the radishes and almond flakes.

Inspired by Georgian cuisine, which loves homemade hazelnut or walnut pastes, which add a new dimension to ordinary meat or vegetable dishes. We chose almonds, which go great with pumpkin, carrots and fish.
