The main thing is the right grain
Chef Elizaveta Batt explains on her channel: restaurants almost always use slow-cooking oats. This is what gives them that special texture and flavor. To know if you've found the right oatmeal, check the cooking time. 20 minutes is optimal, but 12-15 minutes is a minimum. Instant oats won't achieve restaurant-quality results.
