Sabor es Polanco Adds Four Debut Restaurants for Twelfth Edition at Campo Marte

The guest list grew before the tents went up. Sunset Monalisa, Los Danzantes, Pitiona and Zanaya were locked in as debuts months before this twelfth edition of Sabor es Polanco opened its gates at Campo Marte in Mexico City. What they joined was already a roster of more than seventy-five restaurants and twenty separate gastronomic experiences, a number the organizers chose to grow rather than hold.

El Bajio, Guzina Oaxaca and Mural de los Poblanos returned for another year on that same roster, kitchens whose presence has stopped registering as news and started registering as bedrock. A festival this size does not curate so much as it accretes, each edition compressing the last into a layer the next one builds on. The four newcomers arrive as the freshest deposit on ground that had already settled.

Every debut carries a cost the program does not print. A new kitchen at Campo Marte needs its own tent, its own delivery schedule threaded through traffic built for seventy-five other trucks, its own staff pulled off a normal service for a single day. Sunset Monalisa and Zanaya now absorb that cost for the first time, on the same footprint as houses that have run the math for eleven editions before them.

Pitiona and Los Danzantes take on the identical bet from further away, importing a kitchen's rhythm into a circuit that was not built around either of them and will not adjust to accommodate them. What the four debuts buy the festival is variety measured in names; what they cost it is coordination measured in hours. Twelve editions in, Campo Marte has decided that trade is still worth making.

A guest list that grows every year eventually meets the size of the field it stands on. The twelfth edition proved Sabor es Polanco could add four names without the ground shifting under the other seventy-five. The thirteenth will find out how much further that ground can move before it doesn't.
