Diane's Place Debuts at No. 50, Kato Holds No. 49 in Second North America Ranking

The second edition of North America's 50 Best Restaurants ranked Diane's Place, chef Diane Moua's debut restaurant in Minneapolis, at No. 50 and Kato, chef Jon Yao's Los Angeles kitchen, at No. 49, placing a first restaurant and an established one a single rank apart on the same list.

The pastry chef finally converted years of consolidating other kitchens' dessert programs into a restaurant that answers to no menu but her own. Diane's Place, the debut solo venture from chef Diane Moua, opened inside Minneapolis's Food Building, an address that existed before the menu did, and now holds No. 50 on the second edition of North America's 50 Best Restaurants. The building came first, the menu after.

A pastry chef's rise inside someone else's dining room behaves like sediment, compressing quietly under another name for years before anything breaks the surface. Moua carried that pressure through kitchens she did not own and could not redesign to her own specifications, and when the release finally came it did not settle for a familiar format with a built-in audience already trained to order it. It surfaced instead as contemporary Hmong cooking, ranked on its first outing.

One rank higher sits Kato, chef Jon Yao's restaurant in Los Angeles, its ten-course tasting menu holding steady at No. 49 on the same list. Where Diane's Place is new rock still finding its shape, Kato is a plate that settled its faults long ago, running its argument between Taiwanese heritage and the city's food culture across years of nightly service rather than a debut season. One rank separates them; nothing else does.

A building that already existed before the menu did lowers the price of a first restaurant, but it also caps how much of the room the founder actually controls: the address, the walls, and much of the traffic through the door came with the lease already attached. That arrangement let a consolidated pastry chef become an owner without first betting a personal fortune on real estate.

The ranking the restaurant now carries will bring more demand than a borrowed address was necessarily built to absorb, pressing new covers against a room the founder does not fully own. That is the bill that comes due whenever the Food Building's lease does.
