What follows reads like blocking in a play whose set designer understood the assignment long before the cast arrived, the room arranged so that every sightline lands on the towers outside rather than on the pass or the sushi counter, so that conversation happens facing the glass instead of facing each other, so that the crowd filling the tables performs the same quiet choreography of noticing the view that every crowd in every restaurant with this vantage performs, checking it once on arrival and then again on the way to the washroom, as though the panorama needed confirming before anyone could relax into the evening, until the kitchen finally sends out the fusion formula the brand has run since its first opening decades ago and has not seen reason to rewrite since, raw fish meeting tiradito acidity, Japanese restraint meeting Peruvian heat, a recipe old enough now to function less as innovation than as reassurance, the one constant a diner can order into without needing to ask what a dish is or where it came from.
