Tiffany & Co. Opens Blue Box Cafe in Singapore, Its First in Southeast Asia

Tiffany & Co. has opened Blue Box Cafe at Ion Orchard, its first Southeast Asian outpost, with a breakfast menu signed by three-Michelin-starred chef Julien Roye of Odette.

The dress code arrives before the menu does. Every apron, every napkin, every chair rail inside Ion Orchard has been dipped in the same pale blue that has wrapped Tiffany & Co.'s boxes for generations. It is the color of a gift before it is opened, worn now by staff rather than saved for rings. The effect is deliberate. It is the color as argument, not decoration. The restaurant wearing it is called Blue Box Cafe, and it makes no attempt to be anything else.

What that color buys, before a single dish is ordered, is a piece of staging worthy of a proscenium: a room built like a vitrine that happens to serve breakfast, a social choreography (a queue forming outside the mall ahead of opening, a clientele photographing the chair before the plate, the blue itself performing the greeting a maître d' would otherwise give) attended to with the same care as the lighting and the temperature, and only several scenes in, the cooking itself, credited to Julien Roye, whose name carries three Michelin stars from Odette, allowed onto that stage: a soft-boiled egg presented without ornament, a granola made on the premises and left coarse rather than lacquered into something photogenic, a pastry case standing where a jeweler's vitrine would stand, lit the same way, so that a croissant and a bracelet ask to be looked at in exactly the same register.

That the production is touring at all, first stopping in Southeast Asia at Ion Orchard rather than at a boutique of its own, says as much about where Tiffany & Co. expects its audience to already be standing as anything on the breakfast menu does.

What lingers is not the egg, or the granola, or the pastry chosen from the case. Half an hour later, on the pavement outside Ion Orchard, the blue is still doing its work, longer than any flavor was asked to do. That was, evidently, the assignment.
