These aren't your typical brownies, but a special version with extra flavor and lightness. Light yogurt and coffee brownies have become my new favorite recipe. Yes, because when you wake up feeling a little sleepy but really hungry and need something comforting without feeling guilty, these are the perfect choice. They're soft, chocolatey, full of flavor, and even light... and what about the aroma? Coffee and chocolate together are definitely the perfect way to start the day.

The best thing about these light coffee yogurt brownies is that they're ready in 10 minutes and you don't even need eggs, but trust me, you won't miss them. Coffee-infused Greek yogurt replaces the eggs, guaranteeing a perfectly soft and moist batter. Dark chocolate does the rest, and you don't need to add butter or sugar to achieve the desired softness; with sweetener, they're lighter but retain all their delicious flavor.

Light yogurt and coffee brownies: soft and super delicious, but also super light!

In short, these light yogurt and coffee brownies are the perfect solution for breakfast, an afternoon snack, or even after dinner, guilt-free! Trust me, one leads to the other, and the tray will disappear in the blink of an eye, but they won't do you any harm. So, all that's left to do is try them right now. Put on your apron, grab a bowl, and get baking! You'll see how delicious they are!

Preparation time: 10 minutes. Cooking time: 20-25 minutes in a preheated fan oven at 180 degrees.

Ingredients for light yogurt and coffee brownies

20x20 mold

  • 300g Greek yogurt with coffee
  • 1 tablespoon instant coffee
  • 60g coconut oil
  • 200g 80% dark chocolate
  • 100g brown sugar or sweetener of your choice
  • 1 heaped teaspoon baking powder
  • 200g
  • 00 flour

How to make light yogurt and coffee brownies

To begin, melt the dark chocolate and coconut oil. Place them in a saucepan over low heat or microwave in 30-second intervals, just enough to achieve a smooth, glossy cream. Let it cool for a few minutes. Meanwhile, pour the coffee-infused Greek yogurt into a large bowl and add the instant coffee, stirring well until dissolved.

Add the melted chocolate and continue mixing until smooth. Then, add the brown sugar or sweetener and mix again. Sift the flour and baking powder directly into the bowl and mix with a spatula or whisk until you have a smooth, creamy batter.

Line a baking sheet with parchment paper and pour in the batter, spreading it evenly. For a special touch, you can add some chocolate chips or a splash of extra coffee. Bake in a preheated oven at 180°C (350°F) for about 20-25 minutes; a toothpick inserted into the center should come out slightly moist, but not dry. Let them cool completely before cutting them into squares, and you'll see that these light yogurt and coffee brownies will be a hit. Enjoy!
