Quick, easy to transport, and above all, comforting, tarts, cakes, and quiches are always a safe bet. In autumn, these timeless classics are enhanced with mushrooms, the undisputed stars of the season.

Mushrooms, rich in vitamins and minerals, are one of the most beneficial foods for our diet, and we should eat them daily. And what better way to enjoy them than in a tart, a quiche, or even a cake? Perfect recipes for a light and quick autumn dinner.

Choosing the mushrooms

Autumn is the best time for mushrooms: there are countless varieties, each with its own distinctive flavor. Button mushrooms are a classic, mild and versatile, perfect as a base; porcini are meaty, aromatic, and have an intense, earthy flavor, but they are also considerably more expensive unless you're lucky enough to find them in the forest; chanterelles are delicate and slightly peppery; oyster mushrooms are tender and melt in your mouth, with a subtle hint of almond; shiitake mushrooms, native to Asia, have a pronounced flavor and a firm texture. If you're having trouble choosing, you can, of course, mix varieties, making sure to follow the specific cooking instructions for each one.

Prepare and cook the mushrooms.

Naturally flavorful and delicate, mushrooms deserve special attention before cooking. Avoid rinsing them with water, as their porous flesh absorbs moisture and loses its delicate texture. Simply trim the stem (the earthiest part), gently scrub the mushrooms with a paper towel, brush, or slightly damp cloth, and dry them thoroughly. Next comes the cooking stage, crucial for unlocking their full potential: sautéed, baked, or even simmered in an aromatic broth. Don't skimp on herbs and other ingredients (butter, olive oil, chili oil, etc.) to ensure your mushrooms have the maximum possible flavor.

The right ingredients for a perfect autumn cake

For our autumn tarts and quiches, nothing beats homemade pastry. While classic white flour pastry remains a safe bet, there are many ways to reinvent it: rye flour, enriched with grated Parmesan for extra flavor, with hazelnut powder to evoke the season, or even flavored with spices or herbs for added taste and color. It's impossible to talk about autumn without mentioning spices. And rightly so: they transform a simple tart into an unforgettable seasonal dish. Cinnamon, ginger, allspice, cloves, cardamom, anise, or nutmeg add warmth and a richness of flavor to recipes. Finally, for a truly comforting dish, don't hesitate to add crème fraîche, melted cheese (Comté, Gruyère, Gorgonzola, fresh goat cheese, etc.), or even a touch of ricotta.
