Mozzarella in carrozza: an Italian melted cheese sandwich as a sophisticated delicacy
Mozzarella in carrozza, a Neapolitan classic of mozzarella between white bread coated in egg and breadcrumbs, then fried, results in an irresistible sandwich of melted cheese in a crispy layer.
This dish involves cleverly filling two slices of white bread with mozzarella, dipping the sandwich in egg, coating it in breadcrumbs, and frying it until crispy. With its beautiful golden color, it resembles a giant mozzarella stick. Strands of melted mozzarella detach, creating strands of irresistible deliciousness that cling to the crispy slices. Many believe this technique gives the dish its name, "carrozza" means "carriage", and that the strands of cheese represent a horse's reins.
Avoid fresh mozzarella, which releases too much moisture. Use packaged, drained, creamy white cheese. Slightly stale Italian white bread is ideal. An outer crust can be achieved with various types of breadcrumbs. The preparation is methodical, using a generous amount of cheese. Cold cuts or anchovies complement the filling well; then quickly dip in beaten egg and breadcrumbs, and finally fry in a pan with olive oil.
It is served with a side of marinara or pesto sauce, making it the perfect accompaniment for dipping.
