Plunk, a paradise for lovers of wine and Asian flavors
In La Condesa, Plonk fuses Asian techniques with Mexican ingredients and offers a selection of organic, sustainable wines from small producers.
Plonk, in the Condesa neighborhood, is run by sommelier Romina Argüelles and chef Flor Camorlinga. Their cuisine fuses Asian techniques with Mexican ingredients and is paired with international wines that are organic, sustainable, and from small producers. Among all the varieties, sparkling wines are Romina's favorites.
Romina and Flor define Plonk as an "open kitchen with wine as its central focus." Romina appreciates good food and Flor appreciates good wine, and the experience stems from their shared passion for their respective fields.
Flor, born in Morelia, respects traditional dishes, but believes that today it's also important to embrace fusion. "My interest in Asian food arose because it was becoming fashionable in the city, so I started traveling to different places: Asia, Chile, New York, Los Angeles, and finally, Japan, where I visited a restaurant that used Mexican ingredients. That was the ultimate inspiration," says Flor.
Among the dishes are persimmon salad with sourdough bread, peach, mustard, and tofu, and bone marrow with kimchi, served with cotija cheese and brioche. The signature dish, available since opening day, is spicy udon noodles with prawns, peanuts, gochujang, and cheddar. For dessert, there's Mexican chocolate cake with pistachios and a smooth white vermouth cream, or black rice crème brûlée with yogurt.
The wine list includes whites, reds, oranges, and sparkling wines, with a predominance of French labels followed by Spanish ones, as well as wines from Germany, Austria, Hungary, Serbia, Portugal, and Mexico. Romina aims to satisfy both Mexican and international diners.
Romina has a very keen sense of smell. Her love for bubbles stems from time spent with her grandfather and their festive significance. "That's why I always offer bubbles at the end of each visit; and if they don't want alcohol, I suggest they toast with a sparkling tea we have at home."
On Thursdays, Plonk celebrates Magnum Thursdays, offering a selection of six sparkling wines by the glass or as a tasting for $700 MXN. At the last event, sommelier Sandra Buch and Cavas del Mundo paired the selection with Chevalier D'Eon, Los Lodges, Grand Boise Rosé, 1564 Fiesta Blanca, A. Bergère Brut Champagne, and Agustí Torelló Cava.
