Wine recommendation July 2023: “Out of Slate” from the Schauer winery
Here's what you can expect:
A prime example of the new type of Welschriesling comes from the Schauer winery in Kitzeck in southern Styria: the 2022 "Out of Slate" grows, as the name suggests, on red and blue slate.
The steep slopes of Gaisriegl and Hinteregg lie at an altitude of over 500 meters and are home to the estate's oldest Welschriesling vines. The hand-harvested grapes undergo spontaneous fermentation, are aged in large, used wooden barrels, and then stored on the lees for eight months. All of this results in a wonderfully creamy, delicately spicy wine with a rich texture and vibrant character.
This is what the "Out of Slate" from the Schauer winery smells and tastes like.
Besides yellow fruit notes like pear, quince, and lemon balm, it enchants with the finest smoky aromas of the slate. In the finish, an additional spicy component (young arugula) emerges, giving the wine a "supporting bass" quality.
Crystalline, brilliant and dry, the wine concludes its performance, but not without making it clear that its journey towards becoming a complex representative of its variety has only just begun.

Decant the wine and enjoy it not too cold. This wine pairs beautifully with light roasted meats (lemon chicken or saltimbocca), risotto with chanterelles or grilled vegetables with polenta, as well as aromatic fish such as catfish or eel.
