Kimpton Virgilio celebrates its first anniversary

Kimpton Virgilio, a boutique hotel located in Polanco, is celebrating its first anniversary with a special offer for its guests and the launch of a new menu at its acclaimed restaurant, Pepe Mesa Española.

Under the direction of Executive Chef Carlos Soto, Pepe Mesa Española—Kimpton Virgilio's flagship restaurant—launches a new menu that elevates the dining experience with authentic and sophisticated flavors. The bone-in short rib, slow-cooked to perfect tenderness, is served with a creamy, hearty potato purée and a sherry and orange glaze that enhances its smoky and sweet notes. The juicy and perfectly seasoned ribeye steak is accompanied by sautéed mushrooms and a sherry reduction that highlights its depth of flavor.

For paella lovers, the mixed socarrat offers a crispy base with sofrito, saffron, and chistorra sausage, complemented by mussels, shrimp, Padrón peppers, aioli, and a touch of roasted lemon, creating a combination of intense and balanced flavors. To finish on a high note, the Basque chocolate cake delights with its richness and smoothness, accompanied by an exquisite amaretto ice cream.

Beyond Pepe Mesa Española, the hotel's kitchen, led by Chef Carlos, aims to offer a relaxed take on Spanish and international cuisine. The use of local ingredients is another constant in the hotel's gastronomic offerings, as a way to support small producers. Another highlight of the hotel is its terrace, home to La Caña, a bar where you can enjoy cocktails and fresh Mexican snacks—perfect for a warm afternoon.

Kimpton Virgilio is housed in a historic building that was once home to European refugees seeking refuge from the ravages of World War II. Originally used as apartments, it retains its original structure. This boutique hotel offers a beacon of luxury and cultural immersion in the Polanco neighborhood of Mexico City. Designed by Arquitectura de Interiores Studio, it features 48 rooms that blend modern Mexican elegance with bespoke craftsmanship.
