Mantaro Ceviche

Mantaro Ceviche

Ingredients

Artichoke mayonnaise:

140 ml natural tiger's milk

10 g sal

200 ml vegetable oil

20g peeled garlic

280g artichoke base

240 ml tiger's milk base

Natural tiger's milk:

240 ml lemon juice ceviche

30 g sal

23 g aji limo

30 g cilantro

70g red onion

50g celery

180 ml fish stock

60 g ajinomoto

200 ml water

120 ml tiger's milk

70 ml evaporated milk

15 g ground white pepper

20 g what

20g peeled garlic

Lemon juice ceviche:

3.300 g lemon

Fish stock:

150g red onion

20g celery

200g peeled garlic

500g bottom fish

Artichoke base:

500 ml vegetable oil

500g artichoke hearts

Tiger's milk base:

237 ml lemon juice ceviche

10,6 g sal

15.8 g ajinomoto

15g peeled garlic

7.5 g what

15.7 g aji limo

4.2 g cilantro

105g red onion

210.5 tiger's milk

158 g celery

210g ice cubes

421 ml water

Boiled sweet potato:

1120 g sweet potato

Elaboration

Artichoke mayonnaise: In a blender, add all the ingredients and blend. Adjust the salt and set aside.

Natural tiger's milk: In a blender, combine all ingredients except the cilantro stems and chili peppers. Blend for approximately 1 minute. Add the cilantro stems and chili peppers to the mixture and blend 3 times. Strain and set aside.

Lemon juice for ceviche: squeeze the previously washed lemons.

Fish stock: Put water in a pot and add the fish bones and vegetables. Cook for 1 hour until the flavors concentrate.

Artichoke base: In a blender, add the artichoke and oil. Blend and set aside.

Tiger's milk base: In a bowl, combine all the solid ingredients and lightly crush them. Add lemon juice and ice and let it rest for 1 hour, then strain.

Boiled sweet potatoes: Wash the sweet potatoes and place them in a pot covered with water. Cook until tender. Drain the water, let the sweet potatoes cool, and then peel them.

Season the previously cut fish with salt, MSG, and cilantro stems. Add lemon juice, tiger's milk, and artichoke mayonnaise and mix.

Place the onion on the plate and mix with the ceviche. Garnish with fried artichokes, aji limo pepper, cilantro leaves, and diced sweet potato.
