Soffio in Fregene. Some dream of opening a beach bar, and others do. Successfully. This is the story of Soffio, a kiosk founded in Fregene in the summer of 2023, the brainchild of a group of friends and owners of several restaurants in the capital.

After their time on the island, the Soffio team will be moving to Fregene in 2023, to one of the most interesting sea-view restaurants on the Roman coast. "The wonderful thing was being able to open our kiosk in the spaces of a restaurant like La Baia, because they are aligned with our vision of cuisine, focusing on the search for the finest ingredients. And finally, this year the project was enriched with the arrival of Guglielmo Fedele, former chef at Tipografia Alimentare in Milan, who brought his vision and gastronomic philosophy to us," explains Gianmarco Diorio.
Soffio welcomes guests throughout the summer, offering aperitifs every day, expanded to lunch on weekends, and musical entertainment curated by Marco Folco, a long-time fixture on the Roman independent scene.
Soffio's gastronomic offering
Soffio's offerings are always changing, based on the availability of seafood and the creativity of chef Fedele, who creates a menu (updated daily on the blackboard at the kiosk's entrance) featuring a variety of tapas—from gazpacho to tostadas, ceviche, and oysters—featuring a strong vegetable focus, plenty of fruit pairings, and hints of Asian influences. All of this can be savored while enjoying a cocktail, a beer, or a glass of natural wine. Thanks to Icaro, the selection is rich and vibrant, as cheerful as the colorful buckets (yes, the ones we used to build sandcastles with as kids) in which the bottles are delivered. And every weekend, in addition to the DJ (a new guest each time), collaborations with various culinary establishments continue, including Miao kebab, Barred, and, with the highly anticipated arrival of Carnal, among others.
