Chickpea crackers
clove of garlic
Ingredients
- 1 clove of garlic
- 50 g Butter
- 25 g icing sugar
- 75 g chickpea flour
- 25 g wheat flour
- 1/2 tsp Turmeric
- 2 egg whites
- 4 tbsp white sesame seeds
- 2-3 tsp cumin
- 2-3 TL Fleur de Sel
Method · 45 min
- Peel and finely grate the garlic, then heat it with the butter in a small saucepan until the butter has melted. Transfer the mixture to a bowl and stir in the powdered sugar, chickpea flour, wheat flour, turmeric, and egg white to form a smooth, spreadable dough.
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Spread a portion of the dough as thinly as possible onto a sheet of parchment paper using a palette knife, then place the paper on a baking sheet. Sprinkle sesame seeds, cumin seeds, and fleur de sel evenly (but not too densely!) over the dough and bake in the preheated oven on the middle rack for about 6 minutes, or until golden brown and crispy.
- Remove the pastry from the oven, let it cool, then loosen it from the paper with a palette knife and break it into pieces as desired.
