Marinated tuna with smashed potatoes, olives and arugula

Marinate 1 tuna with salt, pepper and 3 tablespoons of olive oil.

Ingredients
  • 300g of raw tuna, thinly sliced
  • Salt
  • freshly ground black pepper
  • 5 tablespoons olive oil
  • 8 medium potatoes
  • 100g cleaned, coarsely chopped arugula
  • 2 tablespoons coarsely chopped Ligurian olives
Method
  1. Marinate tuna with salt, pepper and 3 tablespoons of olive oil.
  2. Boil the potatoes in their skins, let them steam dry, and peel them while still hot. Mash the potatoes, 2 tablespoons of olive oil, arugula, and olives with a fork. Season with salt and pepper.
  3. Distribute the tuna slices and marinade onto four plates. Using two tablespoons, form quenelles from the potato mixture and arrange them on top of the tuna.

Boil 2 potatoes in their skins, let them steam dry, and peel them while still hot. Mash the potatoes, 2 tablespoons of olive oil, arugula, and olives with a fork. Season with salt and pepper.

Distribute 3 tuna slices with the marinade onto four plates. Using two tablespoons, form quenelles from the potato mixture and arrange them on top of the tuna.
