- flour for dusting
- salt – 10 g
- dry yeast – 10 g
- flour – 500 g
- warm water – 350 ml
- lemons
- lettuce - 1 head
- fresh cucumbers – 4 pcs.
- salt – to taste
- oakleaf lettuce – 1 head
- olive oil – 0.5 cups
- medium-sized tomatoes – 6 pcs.
- pitted olives – 200 g
- In a bowl, combine sifted flour with salt, yeast, and warm water. Knead for 5 minutes. Cover and let rest for 25 minutes.
- Place the dough on a lightly floured work surface. Divide into 20 pieces. Roll each piece into a ball, cover, and let rise for another 5 minutes.
- Roll each ball into a flat circle, dusting it with flour and turning it so that the circles roll in different directions. The circle should be 1–2 mm thick.
- Using a wide spatula, transfer 1–2 flatbreads to a floured, flat, rimmed baking sheet (or, if you don't have one, use an upside-down baking sheet). Bake in a preheated oven at 250°C (450°F) for 3–4 minutes. Cool on a wire rack. While one or two bowls are baking, roll out the remaining flatbreads. Let the finished bowls sit at room temperature for 3–4 hours.
- Prepare the salad. Wash the lettuce leaves, dry them, and tear them coarsely by hand. Wash the tomatoes and cucumbers and cut them into slices. Combine the lettuce leaves, tomatoes, cucumbers, and olives. Season with oil, lemon juice, salt, and pepper to taste.
- Using a wet brush, draw a 5-6 cm diameter circle in the center of the bowl. Using a sharp knife, carefully cut out the softened area. Place the salad in the circle and serve.
