A record-breaking meat aging facility
A space of over 2,500 square meters near Mercamadrid will house the meat distribution company with the largest stock of mature beef loins in the world, totaling more than 8,000 units. This is a new initiative from Discarlux, a company founded by partners Carlos Ronda and José Portas.
“The goal of opening this new facility is to lead the national and European beef market: we have created 120 jobs this year and we will have around 250 by 2025, with an annual turnover approaching 100 million euros,” Portas said.
Ronda thanked the customers and staff of Discarlux for making it possible for "beef and ox meat to conquer the menus of the best restaurants in Spain and Europe."
This company was founded in 2005 as a specialist in high-quality red meats and its new facilities are located in the Vallecas neighborhood, a few meters from the main headquarters, and equipped with the latest technology in refrigeration and handling systems.
The goal of these entrepreneurs is also to promote the importance of Galicia's native breeds in their commitment to the recovery of Galician native livestock farming.
The 8,000 loins of oxen and cows that will mature in these climate-controlled chambers will be distributed among the brand's clients such as the Etxebarri grill in Axpe (Vizcaya), Bidea 2 in Cizur Menor (Navarra), Ca Joan in Altea (Alicante), Taberna Pedraza in Madrid or the Sagardi group, but also among restaurants in France, Italy, the United Kingdom, Sweden or Belgium that consume them.
Among those attending the inauguration were the president of the Royal Spanish Academy of Gastronomy, Luis Suárez de Lezo, and the councilor delegate for Innovation and Entrepreneurship of Madrid, Ángel Niño, who thanked Discarlux for the job creation that this warehouse will allow and its contribution "to the economic and social development of the capital."
