Traditional Smoked Turkey Recipe (serves 10)
This is a great option because the meat is already cooked, so all you need to do is add a little flair and heat it up. If you're in a rush for Christmas Eve, we recommend buying it already defrosted to save yourself the time it takes to do it.
Ingredients
- A smoked turkey weighing 5 kilos.
- 1 cup of orange juice
- 1/2 cup of white wine
- 1/2 cup chicken broth or vegetable stock
- A stick of butter
- 4 tablespoons of honey
- Rosemary to taste
- 1 liter of water
Utensils
- An ovenproof container
- A grid
- Turkey syringe
- Hemp thread
Procedure
- Preheat the oven to 200ºC. Tie the turkey's legs together with hemp twine.
- Mix the chicken broth with the orange juice, white wine and season with salt and pepper to taste.
- Place this mixture in a syringe and inject the turkey all over, specifically in the breasts so they don't dry out.
- In another saucepan, melt the butter and add the honey and chopped rosemary. Using a brush or spoon, coat the entire turkey skin with this mixture.
- Place the turkey in an ovenproof container on a rack and place the liter of water underneath.
- Bake for approximately 20 minutes per kilo; that is, if it weighs 5, heat for an hour and a half.
- Halfway through baking, remove from the oven and brush again with the butter and honey mixture. Turn over to ensure even browning and consistency.
- You'll know it's ready when you insert a knife into the bottom of one of the chicken breasts and, when you place it against your lower lip, you feel heat. At that point, remove it from the oven and let it rest for 15 minutes.
- Serve with one of these turkey sauces.
