Fried Chicken and Popcorn

List of Ingredients

  • 9 OZ. of chicken breast
  • 3 OZ. of popcorn kernels
  • 1 WHOLE of egg
  • Cornmeal
  • Peanut oil
  • Extravirgin olive oil
  • Salt

Method

Heat a large, shallow pan with 2 tablespoons of extra-virgin olive oil; drop in the popcorn, cover and cook on high heat until all the kernels pop. Remove from the heat and season with salt.

Cut the chicken breast into bite-size nuggets, about 1/2 inch. Dip them in beaten egg and then bread them in the cornmeal.

Fry the chicken nuggets in plenty of boiling peanut oil for a couple of minutes; they should be golden and crispy.

Drain the chicken nuggets on paper towels and sprinkle with salt. Mix the fried chicken with the popcorn and serve immediately in paper cones.
