Honey Dough Pies
Croissants with jam are a great breakfast option: they'll give you a boost of energy and lift your spirits, thanks to their incredible flavor. Our dough isn't traditional puff pastry, but regular yeast dough: it's said that this is what these rolls were originally made with in Austria.
- Wheat flour
- Powdered sugar
- Honey
- Cottage cheese 9% (semi-fat)
- Berry jam
- Butter
- Corn starch
- Chicken egg (yolk)
- Chicken egg (white)
- Baking powder
- Lemon
- Ground cinnamon
- Place the butter in a saucepan. Add the honey. Melt together over a double boiler or low heat, stirring constantly with a spatula. Remove from heat and let cool slightly.
- Strain the cottage cheese through a fine sieve into a two-liter bowl. Pour in the warm butter-honey mixture and blend. Now add the yolks, zest, baking powder, and cinnamon. Blend again.
- Gradually add flour, a little at a time. Knead by hand until the dough is soft. It will be slightly sticky, which is normal. Cover the dough with plastic wrap and let it rest for 15 minutes.
- Lightly dust your countertop with flour. Don't overdo it, as it will make the dough too coarse. Remove the plastic wrap from the bowl and roll the dough out to a thickness of 2 mm. Cut it into equal-sized squares, each about 8 cm on a side.
- Place about 1.5 tablespoons of thick blackcurrant jam mixed with cornstarch in the center of each dough square. Gently pull the opposite edges of the dough squares toward the center and pinch tightly, leaving decorative ends.
- Line a baking sheet with silicone-coated parchment paper and arrange the dough pieces on it. Brush the surface of each piece with lightly beaten egg white and bake for 20–25 minutes at 180°C.
Scones with jam in egg sauce can be considered an upgraded version of French toast. Both are made with bread and a creamy mixture of eggs and milk. But here, it's a whole bun, not just a slice of bread. Inside is a warm, sweet jam, and on top is a delicious, crispy crust. Unlike toast, scones are baked in the oven, not fried in oil. The result is both breakfast and dessert. Serve scones with jam in egg sauce for an afternoon snack—it's a great idea! They're best enjoyed warm, with hot tea or coffee. Or, conversely, with cold milk or a milkshake.
Pirozhki are small but incredibly active ambassadors of Russian cuisine abroad. They come big, small, and tiny, filled with meat, onions, eggs, cherries, cottage cheese pies, mushroom pies, and dried apricot pies. There are thousands of pirog recipes in Russia, and it's impossible to say which is best. However, with pirozhki, all are good, but the ones baked by grandma are always the tastiest. Or at least by mom.
Bake honey buns in 30 minutes and prove to skeptics that not all baked goods require hours of cooking. Especially since modern home cooks have access to wonderful instant yeast, capable of working miracles! Using this yeast, you can treat your loved ones not only to buns made according to our recipe but also to other baked goods: pies, cheesecakes, and large filled pies. And all of them will turn out airy, tender, and delicious. Just like our honey buns, which take just 30 minutes to make!
