Potato jam!

Have you ever thought about making a sweet jam with potatoes? This recipe is inspired by what was eaten aboard the Cappellini submarine, as depicted in the film "Commander," a cuisine where potatoes were the star.

Ingredients · Servings 4 250 ml jars
  • 500 g potatoes
  • 400 g granulated sugar
  • 50 g raw cane sugar
  • 1 vanilla pod
  • rum
  • spices to taste (cinnamon, cardamom, star anise, cloves)
Method · 1 ora
  1. Combine 1/2 glass of water, 1/2 glass of rum, the sugars, and the seeds scraped from the inside of the vanilla pod in a bowl and mix well.
  2. Boil the potatoes, peel them, mash them while still warm, and add them to the rest of the ingredients, mixing well with a whisk. Then add the spices, adjusting them to your taste.
  3. Pour the mixture into a saucepan, bring to a boil over high heat, then reduce the heat to low, stirring constantly. For a smoother consistency, you can blend it halfway through cooking with an immersion blender. Cook, stirring occasionally, for about 15-20 minutes; it should have the classic jam consistency.
  4. Transfer to sterilized jars, seal tightly, and turn upside down until cold. They will keep refrigerated for up to a year. IMPORTANT: You can use any potato variety, including sweet potatoes; in this case, reduce the sugar content slightly.

How to make potato jam?

The jam is made by boiling and mashing the potatoes and mixing them with water, rum, sugar, vanilla seeds, and spices to taste. The mixture is then simmered slowly over a low heat until it reaches the consistency of jam.

Please note: To make this jam, you can use any potato variety, including sweet potatoes. In this case, reduce the amount of sugar slightly.
