A symbol of Italian excellence, it has become famous thanks to major companies that guarantee those who want to taste, or have others taste, the best. Savini Tartufi is a perfect example: a historic Tuscan company, with nearly 100 years of history, exporting to over 40 countries worldwide.
It is located in the province of Pisa (in Forcoli), on a strip of land between the mountains and the sea where seven types of truffle (of the nine found in Italy) grow, which can be harvested year-round. But this isn't the only reason why Savini Tartufi is considered unique today for the production of this prized tuber and for truffle-based products. Savini Tartufi was also among the first to process it into its many varieties, with an expertise that is evident from the first bite.
The history of Savini Tartufi
It all started by chance: when Giuseppe Savini, a failed hunter, first brought home the tuber he'd found while wandering the woods with his dog in 1920, he never imagined it would be the start of a great story. Back then, truffles were considered "strange and smelly" potatoes and were fed to pigs. It was his son Zelindo who had the brilliant idea of capitalizing on his father's passion for digging: he offered his tubers to be tasted at the banquets of the owner of the estate where he worked. Then he decided to sell them directly to the guests he, as a gamekeeper, accompanied in the woods. A turning point: shortly thereafter, he bought a bar—the Bar Montanelli—which was also a restaurant and shop, in a busy area, perfect for selling, and created a network of truffle hunters from whom he purchased truffles to resell. In turn, his son Luciano had the brilliant idea of using the slightly smaller, unsold truffles for a line of jarred and canned products that would allow everyone to taste them: it was the 1970s, and it was another success. A success that Luciano's son, Cristiano Savini, is now continuing with the rest of the family. Four generations of truffle hunters have been working for almost a century to ensure quality, allowing the world to taste the finest truffles in every season.
