Buñuelos de manzana dulce con salsa de chocolate

- 250 g stale bread
- 250g extra dark chocolate 78% cocoa I love to be excellent
- 230 ml latte
- 70 g granulated sugar
- 50 g fresh cream
- 2 untreated apples
- 1 egg
- lemon
- butter
- cane sugar
- wildflower honey
- 00 flour
- cinnamon
Procedure
- Peel the apples, dice them, and sprinkle the pulp and peels with a squeeze of lemon.
- Melt a knob of butter in a pan, then add the diced apples and a tablespoon of brown sugar. Cook, covered, until the apples begin to fall apart; remove the lid and continue cooking until the liquid has evaporated.
- Heat ½ cup of water, the juice of ½ lemon, and a generous tablespoon of honey in a saucepan over low heat. Add the apple peels and caramelize for 2-3 minutes, stirring constantly.
- Remove the crust and dice the stale bread, then pour over the milk and let it soften. Then, mix together the applesauce, granulated sugar, eggs, a teaspoon of ground cinnamon, and 2-3 tablespoons of flour until the mixture becomes malleable. Form 16 dumplings about the size of a tangerine and refrigerate for 1 hour.
- Bake the dumplings in a preheated oven at 180°C for about 12 minutes, until lightly golden.
- Break the chocolate into pieces and heat it in a saucepan with the cream, stirring with a whisk until you obtain a sauce.
- Serve the dumplings with the chocolate sauce and caramelized apple peels.
