With just five ingredients, which you probably already have at home, you can have this quick snack on the table within 30 minutes.
Palmiers are the ultimate hack for an easy cheese cookie. Because with ready-made puff pastry, all you have to do is sprinkle the pastry, roll it up, cut it, and finally bake it. No kneading or long waiting times like you are used to when baking.
That makes these cookies ideal for the novice baker, or for anyone looking for a simple recipe for a party at the office or at home. But the cheese palmiers remain a challenge for the experienced home baker: make your own puff pastry, for example, or go wild with the filling.
We fill these cheese biscuits with cumin and fennel seeds, and a spoonful of nigella seeds if you have them. We have tried countless spices and believe that you can really add anything to the cheese biscuits. Think of caraway seeds, smoked paprika, or a pinch of chili pepper for some heat. You can also play around with the cheese. We opt for aged cheese, but foreign cheeses like cheddar, Parmesan, or Pecorino also make a tasty biscuit. As long as it is freshly grated and not pre-packaged.
Making cheese biscuits (aged cheese palmiers)
- Grate the 100 grams of aged cheese and whisk the egg.
- Roll out the puff pastry and brush with the beaten egg.
- Mix 1 teaspoon of cumin seeds, 1 teaspoon of fennel seeds, and optionally 1 teaspoon of nigella seeds in a small bowl.
- Sprinkle half of the cheese over the puff pastry, followed by half of the spice mixture. Press it down firmly with your fingers or a rolling pin. Turn the sheet of puff pastry over and then sprinkle the other half of the puff pastry with the grated cheese and the spice mixture. Press down firmly again.
- Fold the first 3 centimeters of both long sides inwards and sprinkle with cheese again. Make another fold so that both sides almost touch the middle. Sprinkle this layer with cheese and press down firmly again. Now fold the roll completely and wrap in plastic wrap. Let rest in the freezer for 30 minutes.
- Preheat the oven to 200 degrees.
- Remove the dough from the freezer and cut into slices of approximately 1 centimeter. Leave about 3 to 5 centimeters of space between the palmiers with aged cheese, as they expand during baking.
- Bake the cheese cookies in the oven for about 10 minutes until crispy and golden brown. Then let them cool to room temperature.
