Bart on his chicory and anchovy salad
Bart: “I came up with this recipe with the famous Waldorf salad in mind as the base. Quick and easy to make, but the flavors and texture are fantastic. Did you know, by the way, that canned anchovies are the only product that hasn't been cooked beforehand? The little fish are actually aged in salt for months instead of being cooked by heating.”
Recipe: simple endive salad with anchovies
- Remove the outer leaves from the chicory heads, cut out the bitter core, and rinse them under cold water. Mix the leaves with the apple cubes and walnuts. Set aside.
- Break the celery stalks in half and pull the bitter strings from the outside. Then cut the stalks into slices and mix them into the chicory mixture.
- For the dressing, whisk the mayonnaise with the lemon zest and juice and the parsley in a bowl. Season to taste with salt and pepper.
- Toss the chicory salad with the mayonnaise dressing and divide between two plates. Shave the Manchego over it and place a few anchovy fillets on each portion.
