Another thing we can't do without is teriyaki sauce. Whether you use it to make chicken teriyaki, salmon teriyaki, or teriyaki mushrooms, it always delivers a divine result.
For this dish, which is inspired by a recipe from the blog Life Made Sweeter, you first make teriyaki sauce in a saucepan (takes five minutes). This is then poured over the chicken and vegetables, which you simply slide into the oven. A lovely weekday meal.
This is how you make your own teriyaki sauce
- First, make the sauce. To do this, mix all the ingredients with a whisk in a small saucepan. Bring it to a boil while stirring constantly. As soon as the mixture starts to bubble and has doubled in thickness, remove it from the heat.
This is how you make quick oven-baked chicken teriyaki.
- Preheat your oven to 200 degrees.
- Prepare a large baking tin (or baking sheet). Line it with aluminum foil: the teriyaki sauce can stick badly to the bottom, and this prevents you from having to scrape it off later. Brush the foil with some neutral oil.
- Place the chicken thigh fillets on top and brush both sides with some teriyaki sauce. Make sure to save at least half of the sauce for later. Bake the chicken for 10 minutes in the preheated oven. Then take them out, brush them with the sauce again, and turn them over. Brush that side with the sauce as well.
- Arrange the vegetables around the chicken pieces and toss through 1/4 teaspoon of sesame oil and the rest of the teriyaki sauce. Sprinkle some black pepper over the vegetables as well.
- Place the dish back in the oven for another 15 to 20 minutes, until the chicken is cooked. You can remove the vegetables earlier if the chicken needs a few more minutes.
- Sprinkle the chicken with sesame seeds and the spring onions. Optionally, you can toss in some ready-made noodles (they absorb the teriyaki sauce so nicely) or some rice. Or stick to chicken with veggies.
