Fried asparagus with pesto mayo: this snack is your new favorite

It feels a bit wrong, doesn't it, deep-frying asparagus? Because isn't that a waste? You don't see it often, but after you've tasted it, you'll immediately wonder why. Because deep-fried asparagus really is delicious, especially in combination with a quick pesto mayonnaise.

What is a real shame is that asparagus isn't deep-fried often enough. We already have quite a long list of asparagus recipes, and as far as we're concerned, this asparagus recipe has instantly shot to the top. The flavor of the vegetable isn't lost; it just gets a crispy coating.

Add a creamy pesto dip to that, and you have the ideal snack or an easy side dish. You eat them with your hands, just like you would with a portion of fries. That makes fried asparagus a nice and accessible recipe for people who don't often cook asparagus but still want to enjoy this beautiful vegetable.

Fried asparagus: recipe

  • Prepare three plates: one with a beaten egg, one with flour, and one with panko. Sprinkle all plates with salt and pepper.
  • Heat the oil to 180 degrees.
  • Coat the green asparagus in the flour, then the egg, and finally the panko. Press the panko firmly onto the asparagus and then carefully place the asparagus in the hot oil.
  • Fry the green asparagus for about 5 minutes, or until they have a golden brown and crispy edge.
  • Drain the fried asparagus on paper towels and immediately sprinkle them with coarse sea salt.
  • Meanwhile, mix the pesto with the mayonnaise.
  • Serve with the asparagus with pesto mayonnaise and a slice of lemon.
