Lard cookies with raisins and flakes

There's probably nothing that makes cookies as crispy as lard. And these ones with fragrant spices, raisins, and walnuts are hot candidates for a new – and not just for Shrovetide – hit!

Ingredients · Servings For about 30 pieces
  • 340 g plain wheat flour
  • 1 tsp allspice
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • salt
  • 280 g oatmeal
  • 200 g caster sugar
  • 250 ml pork lard
  • 125ml water
  • 1 tsp baking soda
  • 3 eggs
  • 150 g raisins
  • 80 g walnuts
Method · 1 h 20 min
  1. Preheat the oven to 190°C. Sift the flour with spices and salt into a bowl. In another bowl, mix the sugar flakes, melted lard, warm water and baking soda. Let stand for about a minute, then stir in the egg and then the sifted dry ingredients. If the mixture seems thin, add a little more flour. Stir in the raisins and nuts to taste (you can set aside some of the nuts and sprinkle them on the cookies before baking). Let stand for 30 minutes so that the flakes swell.
  2. Scoop 1 heaping tablespoon of dough with wet hands, flatten and place on a baking sheet lined with baking paper, spaced slightly apart. Bake for 10 minutes. Continue until all the dough is used up. SOMETHING EXTRA You can also make the cookie dough in a food processor.
