Baked gnocchi with chorizo ​​and mozzarella

Enhance classic gnocchi in tomato sauce with chorizo ​​and mozzarella. A quick pop in the oven will make this dish an irresistible baked treat that will leave you wanting more at home. Baked gnocchi with chorizo ​​and mozzarella is perfect for a quick dinner or a lunch to take to work.

Ingredients · Servings 6
  • 1 tbsp olive oil
  • 1 onion
  • 2 cloves garlic
  • 120g chorizo
  • 800 g canned tomatoes, chopped
  • 1 tsp caster sugar
  • 600 g potato gnocchi
  • 125 g mozzarella
  • 1 bunch basil
Method · 45 min
  1. Heat the oil in a medium-sized frying pan.
  2. Add the finely chopped onion and chopped garlic and fry over medium heat for 8–10 minutes until soft.
  3. Then add the chorizo ​​and fry for another 5 minutes.
  4. Stir in the tomatoes and sugar, season with salt and pepper. Bring the mixture to a boil, then add the gnocchi and cook, stirring frequently, for about 8 minutes until tender.
  5. Heat the grill in the oven to the highest setting.
  6. Add ¾ of the mozzarella and most of the basil to the pan with the gnocchi.
  7. Divide the mixture into 6 smaller baking dishes or 1 larger one. Top with the remaining mozzarella and broil for 3 minutes or until the cheese is melted and golden brown.
  8. Season the finished dish with salt and pepper as needed, sprinkle with the remaining basil and serve with a green salad. Recipe and photos taken from BBC Good Food.
