- 150 g plain wheat flour

- Shortcrust pastry: Separate the egg whites from the yolks. Set the whites aside in the fridge. Quickly knead the yolks together with the cold butter, flour, 30 g icing sugar, vanilla sugar and baking powder.
- Wrap the shortcrust pastry in cling film and refrigerate for at least 30 minutes, preferably 1 hour.
- After this time, roll out the dough and line a 21 x 33 cm baking sheet. Prick the shortcrust pastry with a fork and bake in an oven preheated to 180 °C for about 20 minutes. Remove from the oven and let cool completely.
- Raspberry jelly: Thoroughly mix the contents of 2 packets of confectionery jelly in 750 ml of raspberry syrup with water. Choose the ratio of raspberry syrup to water according to your taste.
- Bring to the boil and cook for a minute. Then let the liquid cool slightly. but be careful not to let the jelly set completely! Sprinkle the raspberries on the shortcrust pastry and spread evenly. Pour over the cooled jelly and let set completely.
- Cream: While the jelly is setting, beat the cream cheese with 30 g of icing sugar, then slowly add the mascarpone and mix everything carefully until smooth. Soak the gelatin in a small amount of water and let it swell. Then carefully dissolve it in a saucepan.
- When the gelatine has completely dissolved, add 2 tablespoons of cream, mix well and pour the mixture back into the cream and mix thoroughly. Pour the cream prepared in this way onto the hardened raspberry jelly and smooth.
- Meringue: Beat the cooled egg whites with a pinch of salt and then slowly add the fine caster sugar in small batches. Finally, add the starch and beat for a while.
- Spread the thick mixture on a baking sheet lined with baking paper. Sprinkle the snow with almond flakes and place in an oven preheated to 130 °C and dry for approximately 1 hour.
- Remove the baked meringue from the oven, let it cool, and then carefully transfer it to the cream.
