Cheese and cranberry pie

- 250 g white mold cheese
- 1 egg
- 200 g cranberries
- 1 onion

- 50 g dried cranberries

- Place all the ingredients for the chutney in a saucepan, add 50ml of water and simmer gently for 30 minutes until thickened. Let cool completely.
- Cut the puff pastry in half. Roll one out on a lightly floured work surface into a circle and use a suitable sized plate to cut out a circle, it should be about 3 cm larger than the diameter of the cheese. Transfer the dough to a baking sheet lined with baking paper and spread about 2 tablespoons of the cooled cranberry chutney in the middle to create a circle the size of the cheese. Place the cheese on the cranberry chutney and refrigerate.
- Roll out the remaining half of the dough into a circle that is about 5 cm larger than the first circle of dough. Remove the baking sheet with the dough and cheese from the refrigerator. Spread 2 tablespoons of chutney on the cheese and cover with the circle of dough. Press it gently and trim the edges so that the circles match. Use a fork to press the edges together all the way around. Return to the refrigerator to chill for another 30 minutes.
- Use a knife to make a small hole in the center of the dough and then use the blunt side to mark decorative stripes or notches. The goal is not to cut through the dough, but to decorate it.
- Preheat the oven to 200°C. Brush the entire cake with egg and refrigerate for about 15 minutes or until the oven is preheated. Then place in the oven and bake for 25-30 minutes until golden brown.
- Let cool slightly and serve with the remaining chutney. SOMETHING EXTRA If you have a really small cheese, divide the dough into thirds or quarters.
