The project is nearing the launch of its first organic vineyard wines.

The organic farm Al Parico, in Menorca, has completed the construction of its new winery and has carried out its first winemaking there. The project thus takes a significant step in its viticultural development and moves closer to releasing its first wines to the market.

The property covers approximately 300 hectares and maintains diverse agricultural activity, closely linked to the island's rural landscape. Organic olive oil is produced on the farm, and sheep and Menorcan horses are raised there. In addition, a vineyard project, now encompassing 14 hectares, has been underway for several years.

Alexis Felisa places the new winery within a line of continuity with the history of the estate. The intention, he affirms, is not to begin a new chapter separate from what Al Parico has been for centuries, but rather to incorporate wine in a way that is coherent with an activity linked to agriculture, Menorcan heritage, and respect for the land.

The new building was designed by STUDIO KO. Its opening allows the estate to produce wine on-site where the grapes are grown, something that had not been possible at Al Parico until now. This change strengthens the integration between vineyard and winery and gives the project its own structure for the winemaking phase.

The commitment to organic production permeates the entire estate. It's not limited to the vineyard, but forms part of the agricultural model that guides Al Parico's operations. This unified vision of the land, where olive oil, livestock, and wine coexist, defines the profile of a property that seeks to maintain the connection between production, landscape, and the historical use of the land.

In terms of viticulture, Felisa raises two central questions for this new phase. The first is what identity a great Menorcan wine can have. The second involves defining the role that local and Mediterranean grape varieties should play in that identity. Both ideas point to a project that aims not only to produce wine, but also to establish a unique way of interpreting the island through the vineyard.

Al Parico also focuses on promoting Menorca's winemaking heritage internationally. The estate operates on the premise that the island remains relatively unknown in this area, and that this lower visibility creates an opportunity to develop a unique and distinctive wine. In this sense, the first winemaking in the new winery is not an isolated event, but rather part of a broader plan to shape this identity.

The winery is now operational before the first Al Parico wines reach the market. The estate is preparing for this next phase, aiming to apply the same principles to the bottle that guide the rest of its agricultural activity: production rooted in Menorca, based on its own vineyards, and aligned with the property's organic practices.
