Modernizing Coffee Machines: Demanding Consumers
Electronic temperature control, pre-infusion programming, stand-by control. These are features that are gaining popularity in coffee machines in the food-service market, which are on display at Fispal Food Service, open today (May 26th) in the Anhembi District.
“Often, people want to prepare their own coffee, just like the one they tasted in a coffee shop, served by a barista,” analyzes Denis Robert, Technician at Gaggia. According to him, the growth in the supply of gourmet coffees in the Brazilian market has stimulated this consumer.
Gustavo Salomão, director of Dr. Coffee, says that the difficulty the food service industry faces in finding good baristas and increasingly demanding consumers are driving the growth of the coffee machine sector, which is becoming increasingly technological. "The technology arriving in Brazil has existed for some time, but the high price didn't attract companies until now, when both factors (demand and lack of skilled labor) led to the importation of this equipment."
Fábio Moraes, from Utam, agrees with both of them. According to her, the growth in the gourmet coffee market in Brazil and the demands of consumers, who seek a more sophisticated experience, are making the technological evolution of coffee machines in Brazil a necessity and no longer a differentiator. "Those who don't keep up with this evolution won't have a place," she believes.
