Sake without ceremony: Dmitry Bogachev brings together a new Asia at LOTUS bistro
The result is precisely the "Asia without ceremony" that the new LOTUS concept speaks of: without excessive ceremony, but with attention to the product, combinations, and the drink as a full-fledged part of the dish.
Sake pairings are a distinct part of the menu. Here, they don't simply complement the dishes, but rather form a distinct part of the culinary experience. Hakushika Honjozo Namachozo is offered with tuna, Kaijun Iwaizake with tartare, 36 Guardians Junmai Extra Dry with scallops, and Dassai 45 Junmai Daiginjo with duck ravioli and foie gras. Shrimp dim sum is paired with Shikika Reisui, and chocolate mooncake is paired with Sakura KiraKira.

The special menu marks the first stage in the development of LOTUS bistro's cuisine. Going forward, Dmitry Bogachev will continue to work on the restaurant's main menu, with new and reimagined dishes gradually appearing on the à la carte menu.
