Amid tacos, memories, and friendship, Pedro Miguel reunites with Paco Chincoya

COATZACOALCOS, Ver., September 19, 2026.- A visit to one of the most traditional places in Coatzacoalcos became a special moment for Mayor Pedro Miguel Rosaldo García, who went to Paco Chincoya's taco stand, a place that for more than six decades has been part of the history and flavors of the city center.
Located on Bravo Street, almost at the corner of Hidalgo, the traditional establishment is run by the second and third generation of the Chincoya family, who keep alive a recipe inherited since 1965, when their parents, Francisco Chincoya Caballero and María Acevedo León, started the business.
The tacos of steamed pig head, offal, assorted meats, pork shoulder, liver and snout, accompanied by their characteristic red sauce, have become part of the gastronomic memory of several generations of port residents.
But for Pedro Miguel Rosaldo, the visit also had a personal significance. Paco Chincoya is an old friend and training partner from his karate days, with whom he maintains a deep affection and respect.
Chincoya, who lost his sight as a result of an accident and is currently in a delicate condition, was able to meet and personally greet the mayor, in a moment filled with memories and affection.
“Paco and I are old friends, and I have a deep affection and great respect for him,” said Rosaldo García during the visit, where he also enjoyed these delicious tacos with the other diners.
Amidst the conversation, the reminiscing, and the tacos that characterize the place, the meeting also allowed us to recognize the history of a family that for more than 60 years has maintained a traditional business in the heart of Coatzacoalcos.
At the end, the mayor made a gesture that caught the attention of those in the establishment: he paid the bill for his entire entourage and also for the customers who were enjoying the traditional Chincoya tacos at that moment.
The taqueria is open mainly on Saturdays, from 8:00 or 8:30 in the morning until approximately 3:00 or 3:30 in the afternoon.
Thus, amidst spicy red salsa, head tacos, and old stories of friendship, Pedro Miguel Rosaldo's visit to Paco Chincoya left a close and human impression of two friends who met again in a place that is also part of the history of Coatzacoalcos.
