Traditional Portuguese gastronomy is undergoing a period of profound reflection, challenged to reconcile the weight of its history with contemporary demands for well-being and sustainability.

The ideal stage to witness this transformation will be the Ogival Room at ViniPortugal in Lisbon, which will host the world premiere of the "Tasting is Knowing" cycle. Curated by journalist Edgardo Pacheco, the first session of this event focused on territorial appreciation will take place on August 29th. The focus will be on purslane, a wild edible plant deeply linked to the Alentejo identity, which here takes center stage in an experience where tradition is reinterpreted with sophistication.

Chef António Nobre marks the debut of this inaugural session as a guest chef. His intervention goes far beyond making the mythical purslane soup; the objective is to explore the potential of the ingredient through current techniques and a contemporary aesthetic that values ​​the essence of the raw material. This collaboration with the cycle extends to the following month: on September 26th, Chef António Nobre returns to the same space to present a second exclusive session, this time dedicated to Alentejo tomatoes and their versatility in the kitchen.

The Alentejo region extends across eight distinct wine sub-regions, a mosaic of terroirs that gives rise to extraordinarily rich and distinct wine profiles. The "Tasting is Knowing" cycle was created precisely to decode these affinities between the dish and the glass, providing tastings commented on by experts in the wine sector who guide the public through these subtleties.

In this scenario of discovery, wine references act as the guiding thread that fixes the territory in the memory of those who taste it. Participants are challenged to understand how the vibrant acidity of a white wine or the elegant structure of a red wine from the region interacts with the intensity of local products. In the philosophy shared by Chef António Nobre, cuisine and oenology must coexist in absolute balance, where the food enhances the notes of the wine and the wine amplifies the truth of the flavors of the land.

This signature defines a philosophy that, in Chef António Nobre's own words, "is born from a deep relationship with Alentejo gastronomy, but seeks to find new ways to interpret it without losing its identity." It's about respecting the roots, but with room for innovation.

A purposeful cuisine focuses on the harmony of the body and the integrity of the product. In practice, this translates into simple but structural decisions: reducing saturated fats, moderating salt, and relying on the power of fresh aromatic herbs to elevate the palate. Meanwhile, a "living dish" is a tribute to seasonality, a promise that the menu should respect the biological rhythm of nature, using each ingredient only at its moment of absolute splendor.

The sharing of this new philosophy has won over an attentive community through the chef's digital platforms and social networks. Far from advocating culinary fundamentalism, Chef António Nobre breaks down prejudices by demonstrating that a gastronomy historically associated with dense and robust flavors can be incredibly balanced. "Preserving Alentejo gastronomy doesn't mean keeping it immune to any change," reminds António Nobre, emphasizing that evolution is the only way to keep a heritage alive.

The goal is not to ban bacon or forget tradition, but to redefine proportions and embrace moderation. To sustain this soulful menu, Chef António Nobre designed a supply chain based on direct contact with local producers in the Alentejo region. From the plains to Lisbon, wild asparagus, wild mushrooms harvested after the rains, fresh pennyroyal, certified Mertolenga beef, and artisanal cheeses that tell stories of shepherding arrive weekly.

The evolution of António Nobre's career and his roots.

This keen instinct for reading the product and the territory has been honed throughout a lifetime. Born in Beja in 1969, Chef António Nobre grew up influenced by the aromas of his mother's and grandmothers' kitchens. His formal education led him to the Naval Academy, where he completed the basic cooking course between 1990 and 1992, acquiring a discipline that he now applies to gastronomic management. Back in Beja, he left his mark on local restaurants and the opening of the Pousada de São Francisco.

His ambition to expand his horizons later led him to Évora, where he managed the kitchens of the Hotel da Cartuxa and M'AR De AR Aqueduto, consolidating his name as one of the great guardians of the gastronomic heritage of the South. In 2019, Chef António Nobre moved to the capital to take the helm of Degust'AR Lisboa, a space where Alentejo classics began to dialogue with the refined techniques of French cuisine. A member of the Alentejo Gastronomic Confraternity, he is also the author of the books "Portuguese Chefs" (2006) and "Between Coriander and Pennyroyal" (2010).

Today, by combining the experience gained from a lifetime dedicated to Alentejo cuisine with the new demands of a public seeking sustainability, António Nobre is shaping the contours of his own legacy. His presence in the "Tasting is Knowing" cycle reflects a journey in constant motion. By transforming genuine ingredients into haute cuisine experiences, the chef proves that the tradition of Sergipe remains alive, surprising, and ready to reinvent itself with each season.
