Famous for its 72-hour-fermented bread, Chef Olivier Anquier’s bakery brings the tradition of French boulangeries to downtown São Paulo

Mundo Pão by Olivier is the perfect spot for anyone looking for artisanal breads, viennoiseries, and French pastries.

Having been in Brazil for nearly five decades, the chef has become a leading figure in São Paulo’s culinary scene, with three restaurants and a cultural center. At Mundo Pão, Olivier offers everything from naturally leavened breads to croissants, sandwiches, and salads.

Olivier Anquier’s bakery combines the tradition of French boulangeries with a contemporary and familiar touch for the Brazilian public. The focus is on artisanal products, with special attention paid to the baking process.

The menu’s favorite is the P72 — a signature bread with a 72-hour fermentation process, a crispy crust, and a soft crumb. You can try elaborate sandwiches made with this bread, such as the Bocaina (mushrooms, hummus, arugula, and pesto sauce) or the Paulista (pork roast and house sauce).

In addition, guests can enjoy brioche, baguettes, traditional or almond croissants, quiches, chocolate mousse, and specialty coffees. In other words, you can savor the best of French cuisine with a São Paulo twist, all bearing Olivier Anquier’s signature.

The story of Chef Olivier Anquier and his restaurants in São Paulo

The chef was born in Montfermeil, in the suburbs of Paris, France. He arrived in Rio de Janeiro in 1979 as a tourist but fell in love with the country and decided to stay. Since then, he has become a naturalized Brazilian citizen and has worked as a model, television host, and chef.

He currently owns the restaurants L’Entrecôte d’Olivier in Itaim Bibi; L’Entrecôte d’Olivier Rooftop in República; and of the five Mundo Pão do Olivier locations in São Paulo.

The chef will also soon open the Arquivo Anquier, a cultural space in the República neighborhood. Scheduled to open on September 16, the center will offer free exhibitions and hold a charity auction of the TV host’s famous green Volkswagen Beetle.
