Franca Opens in Barcelona With No Single Cuisine to Answer To

Franca has opened in Barcelona from a partnership of a Catalan, a Venezuelan, and an American cook, built to answer to none of their home cuisines first.

The room commits to nothing. Not a flag on the wall, not a shelf of imported jars announcing where the kitchen owes its allegiance, not even a menu that opens by naming a region before it names a dish. Franca has opened in Barcelona built on that refusal.

Behind the room sits an arrangement that would once have been staged as a gimmick and now reads as method: a Catalan cook, a Venezuelan cook, and an American cook, none of them senior to the others by nationality, none of the three traditions installed as the frame around which the rest must apologize. A dining room built on a single native cuisine tells its guests, however quietly, where to defer. This one declines to say.

It is a harder pitch than the reverse. A single-tradition kitchen can be judged against the depth of one lineage, forgiven a misstep as a variation within the family. A kitchen built from three lineages at once has no family to be forgiven by, and every dish either finds its own logic or is exposed for borrowing one.

What that produces at the level of technique is closer to a company without a lead than to a kitchen with a chef and their supporting hands, the sort of ensemble staging in which three actors trained in different schools are asked to hold the same scene without one of them setting the tempo for the rest, so that a plate here answers to whichever of the three techniques the dish demands rather than to a house style imposed from above, and the risk that comes with it, the one every director of that kind of ensemble accepts before opening night, is that a script with no lead can just as easily read as a script with no spine.

Outside, on the pavement, the sensation that stays is not of having eaten Catalan food, or Venezuelan food, or American food. It is the sensation of having watched three people decide, in advance, not to make that call for you.
