Ingredients · Servings 2
- 400g udon noodles (precooked)
- 750 g Hokkaido pumpkin
- 2 spring onions
- 1 clove of garlic
- 10 g ginger
- 1 tbsp curry powder
- 200 ml vegetable broth
- 200 ml coconut milk
- 1.5 tbsp white miso paste
- 50 g Baby spinach
- 1 lime
- Vegetable oil (for frying)
- black sesame seeds (for garnish)
- Chili (optional)
Method · 30 min
- Peel and finely chop the garlic and ginger. Slice the white part of the spring onions into thin rings, cut the green part diagonally and set aside. Cut the Hokkaido pumpkin into small, uniform cubes (approx. 1.5 x 1.5 cm).
- Heat oil in a medium saucepan. Add ginger, garlic, and the white parts of the spring onions and sauté until translucent. Add the pumpkin and fry for about 5 minutes. Add the curry powder and fry briefly, then deglaze with vegetable stock and coconut milk. Simmer for another 7 minutes, or until the pumpkin is tender.
- Briefly blend the pumpkin with an immersion blender until creamy, leaving some cubes of pumpkin. Add the miso paste and stir until dissolved. Now add the udon noodles and heat for about 3 minutes, gently pulling them apart.
- Season with lime juice. Just before serving, add the spinach and let it soften in the sauce. Divide among bowls and sprinkle with green spring onion rings, black sesame seeds, and, if you like, a little chili.
