If you love soft-centered cakes... prepare to fall in love with this autumnal version! This warm-centered pumpkin cake is a treasure trove of sweetness, with a creamy and irresistible center. They're made with just a few ingredients (plus the clever trick of using raw pumpkin!), and a melt-in-the-mouth center is guaranteed if you bake them just right (I've already tested them several times, trust me!). This time, I used just a little vanilla for flavoring, but you can also get creative and use cinnamon, ginger, or a mix of autumnal spices. Perfect enjoyed warm, dusted with powdered sugar, perhaps with a steaming cup of tea on the side.
